Abstract [sv]
People have the right to expect the food they eat to be safe and suitable for consumption. Food handlers therefore have a responsibility to assure that food is safe and appropriate for eating. The aim of this project was to prepare the company, Lantmännen AXA Foodservice, in Laholm, Sweden, for certification of Food Safety by the BRC Global Standard.
Flow charts for every line in the production of pancakes, meat products and wraps were made, 14 in total. A document of all the company’s raw material was made where the ingredients were divided into different categories.
The HACCP-plan, including risk analysis and control chart, is developed and upgraded to the production of today. A total of 17 risk analysis and control charts have been made for all the lines in production. One risk analysis for the ingredients in the wraps production has also been made. A traceability test was performed where a product made earlier this year was chosen and all its ingredients were traced and lab tests controlled.
The project has resulted in a good and applicable HACCP which meets the requirements of the BRC standard. The traceability test needs a few completions to fulfil the standard, but a very good beginning has been made.
